Crispy Honey Mustard Salmon, Coconut Milk Rice, and Muffin Frittata

For many students, life is synonymous with busy. Your everyday is a recipe of work and school, with a hint of social life for taste and a drop of sleep as a garnish. The three recipes below are quick thirty-minute dishes that have never failed me and add a small delight to my daily meals.

Crispy Honey Mustard Salmon

Prep Time: 5 minutes

Cook Time: 15 minutes

Serves: 1 per fillet

Ingredients:

• 1 Salmon Fillet

• 3 Tablespoons of Melted Butter

• 3 Tablespoons of Dijon Mustard

• 1 Tablespoon of Honey

• Panko Bread Crumbs

• Parsley

• Oil

Prep:

• Mix together the Melted Butter, Dijon Mustard, and Honey. Use a brush to coat the non-skin side of the salmon fillet with a generous coat of the mix.

• Mix together the Parsley and Bread Crumbs. Lightly or generously coat the salmon to your liking.

Cook:

• Preheat oven to 400 degrees.

• Put the salmon into the oven on top of lightly oiled aluminum foil for about 15 minutes until the salmon is flaky and moist.

Coconut Milk Rice

Cook Time: 25 minutes

Serves: 3-6

Ingredients:

• 3 Cups of White Rice (My preference is a short grain variety)

• 1 13-14 ounce can of Coconut Milk

• (Optional) Shredded Coconut or Coconut Flakes

• 2-3 Cups of Water

• Salt

Prep:

• Lightly coat a pot with oil and mix in the Rice, Coconut Milk, Water, and Salt. You can also add in the Shredded Coconut or Coconut Flakes; save some for garnish later.

Cook

• Heat the mixture over medium-high heat and stir constantly until the mixture begins to simmer.

• Reduce heat to low and cover with a secure-fitting lid and let it cook for about 20 minutes. After 20 minutes, check to see if the rice needs more water. If there is still a bit of water, let it simmer half-covered for a few minutes.

• Once the rice has finished cooking, turn of the heat, place the lid back on the pot and let it sit for at least 10-15 minutes to help it settle.

• Garnish with Shredded Coconut or Coconut Flakes

Muffin Frittata

Prep Time: 5 Minutes

Cook Time: 20 Minutes

Serves: 4-6

Ingredients:

• 6 Eggs

• ½ Cup of Milk

• Salt and Pepper

• Cheese (Use your favorite, my preference is Asiago)

• Chopped Scallions

• Chopped Peppers, Red or Orange

Prep:

• Mix all the ingredients together in a mixing bowl.

• Lightly oil or butter a muffin-tin (or cupcake tin) and fill the mixture about halfway full into each cup.

Cook:

• Preheat oven to 350 degrees.

• Place in the oven for 20 minutes and let it cook until the center is set and springy.

• Let it cool for about 5 minutes before serving.

These three recipes are favorites that I have used on multiple occasions and can be altered and changed easily depending on the ingredients on hand. Regardless of how much time you have, these recipes take a few minutes to prep and are easy to throw in the oven and get a few minutes of R&R during those busy days.

You always have a few minutes to eat better every day. As always, engineer those recipes and enjoy good eats!
