With finals only a couple weeks away and semester projects coming to a close, sleep is important to recharge and regenerate your physical and mental stamina in the coming weeks. However, these coming weeks may leave you restless and unable to drift into your dreams as worry and stress may take precedence.

Bananas may be the answer to this predicament. They contain a good source of vitamin B6 that is needed to induce sleep at night and keep you healthy as well. Aside from eating them fresh, two recipes will be covered this week to help you snack on bananas with a bit of a sweet twist.

Crunchy Banana Slices

Prep Time: 10 Minutes

Servings: 8

Ingredients

1 Banana

Peanut Butter

½ Cup of Cereal of Choice

Prep

Diagonally slice the bananas into ½ inch pieces.

Coat each one lightly with peanut butter. If you’re allergic, a nice fruit jam will do.

Cover each piece with cereal of your choice or peanuts. If you want, try crushed lightly salted chips to add a salty and sweet flavor instead.

Quick Banana Pudding

Prep Time: 5 Minutes

Cook Time: 10 Minutes

Servings: 2

Ingredients

2 Bananas

2 Tablespoons of Water

1 Tablespoon of Cinnamon

1 Tablespoon of Brown Sugar

Prep

Mash bananas and mix well.

Add the water, cinnamon, and brown sugar and stir.

Cook

Heat a small skillet to medium heat.

Add the mixture and stir continuously until a pudding like consistency occurs. This should take about 5 minutes, although it might take a little longer.

Both recipes will taste delicious as you work on your projects, and will help you sleep when the time comes. Try adding some blueberries or strawberries to the pudding or use any other fruits such as apples to keep yourself awake in the morning.

Whatever you choose to add to yours, do not be afraid to experiment with new flavors and most importantly, happy eats!
