Sometimes cooking a thirty minute meal seems like a hassle on difficult days. And yet, we should not give in to the temptation of ordering takeout every night or harassing the local drive through window at Checkers.
We’ll be keeping speed, ease, and taste in mind with three recipes that are definite staples to have when time is of the essence.
Souffle Omelet
One of my favorite quick treats that goes well with a salad, in a sandwich, or some crackers Simple to make and one of the most delectable dishes you can serve for unexpected guests or for a weekend brunch at home with tea.
Prep Time: 5 minutes
Cook Time: 2 minutes
Serves: 1-2
Ingredients:
• 2 Eggs
• 2 Different Types of Cheese (My preferred pair is Asiago and Gruyere)
• Salt and Pepper
• Butter
• Bacon/Ham/Mushrooms, Chopped into Thin Strips
• Chives, Chopped finely
Prep
• In a mixing bowl, combine and whisk together all the ingredients except the butter and cheeses.
Cook
• Preheat an oven-proof pan to medium heat and coat the entire pan with butter. Ensure the butter does not burn by either letting it gradually melt as the pan rises in temperature or removing it from heat temporarily after the pan has been warmed.
• Pour in the mixture and stir occasionally to prevent the mixture from sticking to the pan.
• After a minute, remove from heat and add cheese on top of the mixture.
• Place in a broiler for about a minute until the egg has fully set.
Elegant Fish Sticks
Definitely a favorite for a summer’s day with a side of fries or with a creamy soup, this dish looks beautiful and your friends will definitely be surprised with the moist and crisp texture of this dish.
Prep Time: 5 minutes
Cook Time: 2 minutes
Serves: 1-2
Ingredients:
• A White Fish, cut into half inch wide strips
• Egg
• Flour
• Panko
• Parsley
• Salt and Pepper
• Butter or Olive Oil
Prep:
• In a bowl combine the panko bread crumbs and parsley together.
• Coat each fish strip with a light amount of flour and shake off the excess.
• Add a coating of egg by lightly dipping it into the mix and then add a coating of the panko and parsley mixture.
• Let it rest in the fridge covered for about 10 minutes. This could be made a day beforehand and will be good for up to a day.
Cook:
• Set to medium-high heat a non-stick pan, add either olive oil or butter and let it warm gradually with the pan.
• When the pan is sufficiently hot, slowly place the coated fish strips into the pan.
• Let it cook for two minutes on each side until it’s a light golden color.
• Let it sit for a few minutes than enjoy.
These two recipes have been life savers for when I need a quick meal for lunch or want to be lazy and still eat well on an early Saturday morning. Although there are a lot of extravagant dishes out there, good eats can be created in a matter of minutes.
For beginning cooks and those that want to try their hand at something outside of hot pockets for a breakfast meal, these recipes are a breeze to make and can really liven your day. Next week we will be looking at some romantic dishes that you can serve to your significant other or to treat yourself with your cat.
