Your weekends are precious, sleep has the same worth as diamonds, and time never seems to be on your side. This week we will be approaching three simple and “lazy” recipes that require you to put stuff on, put it in the oven, and eat.
Breakfast in Bread
This recipe has been a favorite of mine after long eventful nights out with friends or on Sunday mornings
where dish washing feels more of a chore. Although traditionally you could toast your bread and fry up your eggs and bacon, this dish takes a bit more time to make, but requires minimal oil or work.
Prep Time: None
Cook Time: 25-30 minutes
Servings: 2
Ingredients:
• 2 Slices of Whole Wheat Bread – feel free to substitute with a bagel, white bread, or any thick cut slice
• 6 Strips of Bacon, cut in half or to the length of the bread used. Optionally, feel free to use ham or mushrooms as a substitute.
• 2 Eggs
• Paprika, Salt, and Pepper
• Cheese (Optional)
Cook Time:
• In a preheated 400 degree oven, place the cut strips of bacon onto a foiled tray and let it crisp in the oven for 10-12 minutes.
• Now lay the slices of bread onto the tray and transfer the bacon onto the bread. Season with a bit of paprika, salt, and pepper.
• Crack an egg onto each slice of bread and place it back into the oven for 10-15 minutes until the egg is settled.
• Optionally, you can add cheese in after the egg has finished cooking and let it sit in the oven for 2-3 minutes.
Brownies in a Mug
I can guarantee that many of you have seen or heard of cooking brownies in a mug. After testing out the different ways and many combinations, I can tell you that it works. Amazingly. Here is a life hack classic that has been tried and tested with my friends as the guinea pigs… I mean as test subjects.
Prep Time: 5 minutes Cook Time: 5 minutes Serves: 1
Ingredients:
• ¼ Cup of Flour
• ¼ Cup of Sugar
• Dash of Salt
• 2 Tablespoons of Cocoa – alternatively, you can also use the hot chocolate instant packets instead of the cocoa powder. Just omit the sugar and salt as well.
• ½ Teaspoon of Cinnamon or Pumpkin Spice
• ¼ Cups of Water
• 2 Tablespoons of Vegetable Oil
Prep:
• In your favorite mug, combine all the ingredients together and stir until smooth.
Cook:
• Microwave on high for 60 seconds and then check the consistency. If it is not settled yet, keep microwaving in 20 second intervals until the brownie is moist and cake-like.
• Serve with ice cream directly in the mug.
Asian Bruschetta
This recipe requires a bit more work than the other two, but this fresh-tasting, quick to make snack or appetizer will leave you craving more. It’s also healthy and can be customized with your favorite vegetables and fruits.

Ingredients:
• Handful of Grape Tomatoes, diced into eights
• White Onion, diced finely
• Garlic, diced finely
• Basil, chopped finely
• Ginger, chopped finely
• Sesame Seeds
• Sesame Oil
• Salt and Ground Pepper
• Italian Bread, slice diagonally and no thicker than ¼ to ½ inch.
Prep:
• After chopping and dicing your vegetables, mix together well with a light coat of sesame oil, salt, and pepper
Cook:
• Preheat your oven to 350 degrees and toast your bread, optionally you can season with garlic powder or rub garlic onto each side.
Serve:
• Top each slice with a hearty serving of the vegetable mix.
These recipes will take a few minutes to make but are definitely something that anyone can make in the kitchen, whether they are short on time or just want to eat something delicious without the effort. As always keep engineering those recipes and always make time for good eats!
